CARROT SALAD 
2 c. shredded raw carrots
1/2 c. raisins or currents, soaked and drained
1/2 c. chopped/crushed pineapple, fresh or canned (drained)
1/2 c. chopped apples with peels
1 tsp. lemon juice
1/4 c. light salad dressing or mayonnaise
1/4 c. non-fat yogurt

Wash, pare, shred carrots. Toss all ingredients and chill. Place on bed of lettuce leaves.
