ZUCCHINI CASSEROLE 
1 lb. ground meat
1 sm. onion
1 can cream of mushroom soup
Bread crumbs
2 sm. zucchini
16 oz. pkg. Cheddar cheese or extra sharp

Brown ground meat in small amount of oil with diced onions. Layer in 1 1/2 or 2 quart casserole with zucchini, meat and cheese. Spread mushroom soup over top of casserole and cover with bread crumbs. They will act as the lid. Bake uncovered at 350 degrees for about an hour.
