STEVE'S QUICK FISH VEGETABLE
SOUP
 
Healthy and good as a quick meal late at night!

1 to 1 1/2 lb. diced fresh fish of choice (no skin - I prefer salmon, tilapia or tuna)
2 chicken or vegetable bouillon cubes
1 8 oz.) pkg. fresh mushrooms, sliced
salt and pepper, to taste
1 (16 oz.) pkg. frozen mixed vegetables (I prefer the California mix)
red hot chili pepper flakes, to taste
1/8 tsp. ginger powder
7 to 8 cups water

Bring water to a boil. Add bouillon cubes, mushrooms and then salt and pepper, to taste. Let it come to a boil, lower heat to medium, cover and simmer for ten minutes.

Raise heat to high, add the rest of the ingredients, with the exception of the fish. Cover and bring to a boil. Add fish and boil for 3 minutes.

Note: You can experiment with ingredients. Try with shrimp, or add chopped spinach.
