SZECHUAN SHRIMP 
1 tsp. minced garlic
1/4 tsp. red pepper
3 tbsp. vegetable oil
1 1/2 tsp. minced fresh ginger or 1/4 tsp. ground ginger
4 green onions, sliced diagonally into 1 inch pieces
1 lb. fresh lg. shrimp, shelled and deveined
1 med. red pepper, in thin strips
3 c. hot cooked rice
1/3 c. teriyaki sauce
3 tbsp. orange marmalade

Mix garlic and pepper flakes in oil in microwave in 9 inch skillet; microcook uncovered on high 1 minute. Stir in remaining ingredients except shrimp and rice. Dipping shrimp in sauce, place in circle on top, thicker parts to outside. Microcook on high 3-4 minutes until shrimp are cooked, rotating dish once. Serve over rice. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
