CASHEW - DATE - BANANA PIE 
20 dates, pitted
2/3 c. cashew nuts (raw or toasted)
2 c. water
1/2 tsp. salt
1 tsp. vanilla
1 banana, lg.
1 tbsp. cornstarch

Blend cashews and dates with water until smooth. Remove from blender and add salt and vanilla. Make cornstarch smooth with a little of the liquid, then add the date-cashew mixture. Cook until thick.

Make your favorite pie crust shell. Slice half of banana and place in bottom of shell. Cover with filling, garnish top with rest of banana, whipped cream and chopped nuts.
