DATE AND NUT PIE COOKIES 
1/2 c. sugar
1/2 c. brown sugar
1/2 c. shortening
2 eggs
2 c. flour
1/4 tsp. salt
1/2 tsp. baking soda

Cream shortening and sugars, add eggs, beat well. Add dry ingredients. Mix well. Chill. Roll 1/8 inch thick on floured surface. Cut with 3 inch cutter. Place teaspoon filling on 1 cookie, top with another cookie. Press together with tines of fork around the edges of the cookie. Bake at 350 degrees until light brown.

FILLING:

1 c. chopped dates
1/4 c. sugar
1/3 c. water

Cook over low heat about 5 minutes. Add 1/2 cup chopped nuts. Cool.
