CAULIFLOWER CHEESE 
1 med. sized cauliflower, divided into flowerets
1 tsp. salt
2 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
1 c. cheddar cheese, grated
Dash cayenne pepper
4 tbsp. bread crumbs

Boil the cauliflower in salted water 10 minutes until almost tender. Drain cauliflower and place in a small buttered casserole. To prepare the sauce, melt the butter in a saucepan. Stir in the flour and add the milk gradually. Stir in 3/4 cup grated cheese and cayenne pepper. Cook 2 minutes until the sauce has thickened. Pour the sauce over the cauliflower. Sprinkle with remaining cheese and bread crumbs. Place in a 400 degree oven for 5 minutes and then under the broiler for 3 minutes to brown the cheese and bread crumbs. 4 servings.
