CAULIFLOWER CHEESE PIE 
2 c. packaged grated raw potato
1/2 tsp. salt
1 egg
1/4 c. onion

Heat oven to 400 degrees. Place grated potato in a colander, salt it and leave it for 10 minutes. Squeeze out excess water. Add the remaining ingredients. Pat it into a well oiled 9 inch pie pan, building up the sides. Bake for 40-45 minutes until browned. Brush with oil about 15 minutes before it's done.

Turn oven down to 375 degrees.

FILLING:

1 big c. Cheddar cheese, grated
1 med. cauliflower, cut in pieces
1 clove crushed garlic
1 c. chopped onion
3 tbsp. butter
Dash of thyme
1/2 tsp. basil
1/2 tsp. salt
3 eggs and 1/4 c. milk (beat together)
Paprika

Saute onions and garlic in butter for 5 minutes. Add herbs and cauliflower and cook, covered for 10 minutes, stir occasionally. Spread half the cheese into the baked crust, then the cauliflower mixture, then the rest of the cheese.
