STRAWBERRY SHORT CAKE 
1 c. miniature marshmallows
2 c. (2, 10 oz. pkg.) frozen sliced strawberries in syrup, completely thawed
1 (3 oz.) pkg. strawberry gelatin
2 1/4 c. flour
1 1/2 c. sugar
1/2 c. solid shortening
3 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 tsp. vanilla
3 eggs

Generously grease bottom only of a 13 x 9 inch pan. Sprinkle marshmallows over bottom of pan. Combine strawberries and gelatin and set aside.

In mixing bowl combine remaining ingredients and blend at low speed of mixer. Beat 3 minutes at medium speed. Pour batter over marshmallows. Then pour on strawberry mixture. Bake at 350 degrees for 45-50 minutes until golden brown. Toothpick inserted in center comes out clean. Serve warm or cool with ice cream or whipped cream.
