CANNOLI FILLING 
2 c. ricotta cheese
1/4 c. bitter sweet chocolate chips
1/2 c. confectioners' sugar
1/4 tsp. vanilla
Dash cinnamon

Pass ricotta cheese through strainer. Add remaining ingredients and hand mix gently. Chill until ready to stuff cannoli shells. (Fills 6 shells.)

For this recipe I used fat free ricotta though its healthier, at least a 1% ricotta would provide a fuller taste. I also used a mix of milk chocolate and semi sweet chips as the semi sweet was too bitter for the mixture. I also used 1/2 cup instead of 1/4 cu as there was not enough. The mix inside overall tasted similar to the cannoli you get at Whole Foods.

I used semi sweet chocolate chips with some milk chocolate also. Its a good idea to use a good ricotta cheese or to whip some small curd cottage cheese. Either one works very well.
