BAKED SCRAMBLED EGGS 
2 sticks (1 c.) butter
4 doz. eggs
1/2 c. all-purpose flour to prevent sogginess
1 1/2 qt. milk
1 1/2 tsp. salt
Pepper to taste
2 c. ham or cooked sausage, cut very fine

Melt butter in two 12 x 18 x 2 inch cake pans. Beat eggs together lightly with a fork. Blend flour with a little milk until smooth; mix thoroughly with beaten eggs, remaining milk, salt, pepper and meat. (Flour gives the mixture stability when cooked.) Bake at 350 degrees for 20 minutes; stir lightly. Continue baking about 20 minutes more or until eggs brown lightly and leave sides of pans. Cut in squares and serve. 50 servings.
