MINESTRONE SOUP 
1 tbsp. oil
1/4 lb. pepperoni, sliced
1 clove garlic, minced
1 onion, diced
1 lg. carrot, chopped
1 celery stick, chopped
1 zucchini, sliced
1/2 tsp. dried basil
1/2 tsp. dried oregano
2 (28 oz.) can tomatoes
2 chicken bouillon cubes
2 c. water
1/2 (10 oz.) pkg. spinach
1 (19 oz.) can red kidney beans
1/4 cabbage
1/2 c. red wine
3/4 c. macaroni
Grated Parmesan cheese

Heat oil. Saute next 8 ingredients 10 minutes. Add remaining ingredients, except macaroni and cheese. Simmer about 1/2 hour, stir occasionally. Add macaroni, cook 20 minutes. Sprinkle with Parmesan cheese. Serve with Herbed Italian Bread. Makes 3 quarts.
