MINI FRUITCAKES 
4 eggs, well beaten
1 c. chopped walnuts
1 c. raisins
1 (8 oz.) pkg. chopped dates
1 tsp. vanilla

Mix all ingredients together. Grease or spray with Pam, 2 mini cupcake pans (12 cakes per pan). Fill and bake at 350 degrees for 25 minutes. Loosen with knife and turn on to rack to cool. Place each cake in a mini cupcake paper. Store in an airtight tin or plastic. Will keep for weeks.
