PANNED SPINACH | |
2 lbs. spinach 1 tbsp. bacon fat, butter 1 minced, peeled clove garlic 1 tsp. salt 1/8 tsp. pepper 1/2 c. milk 1 tsp. lemon juice 1 tbsp. flour Clean spinach thoroughly by cutting off and discarding, root ends, tough stems and any yellowed leaves. Wash to remove any sand that may be hiding (today's packaged products are almost dirt free) ! Meanwhile, heat bacon fat in kettle. Add garlic, saute tender. Add spinach, salt, pepper. Cook covered, over medium heat until tender, about 5 minutes stirring occasionally. Slowly add milk and lemon juice to flour, stirring smooth. Pour over spinach. Cook until sauce is smooth and thickened, while tossing spinach with a fork. Makes 4 servings. |
