OYSTER STEW 
1 qt. milk
1/2 pt. light cream
1 tbsp. butter
Salt and pepper to taste
12 oz. can oysters

Combine first 4 ingredients, in a saucepan; scald and skim. Meanwhile, cook oysters in their own liquor until edges curl. Just before serving. combine with milk and cream mixture.

VARIATION:

Add to milk:

1 slice onion
2 stalks celery
2 sprigs parsley
1/4 bay leaf

Heat milk over boiling water for 20 minutes. Remove vegetables; add cream and:

1/4 c. cracker crumbs

Heat milk and cream mixture add:

Prepared oysters
Butter
Salt and pepper

Serve at once.
