ORIGINAL RICE PUDDING 
3 tbsp. butter
3/4 c. rice
1 1/2 c. water
Dash of salt
1 qt. milk (or 1 c. med. cream and 3 c. milk)
4 eggs, beaten
3/4 tsp. sugar
1/2 tsp. vanilla
1 c. raisins, plumped

In a heavy saucepan combine butter, rice, salt and water. Place over heat; bring to a boil. Lower heat to a simmer. Cook until water is absorbed.

Add milk. Cook covered until rice mixture is cooked. Stir a little of the hot rice mixture into the beaten eggs, then pour into pan, stirring very well. Add sugar. Cook 5 minutes longer. Remove from heat and add vanilla and raisins. Serve warm or cold.
