STUFFED CHICKEN WITH CHEESE 
Chicken breast, de-boned
Mozzarella sticks
Provolone cheese, sliced
Bread crumbs
Milk
2 eggs

Pound chicken flat. Sprinkle inside with salt and pepper. Wrap slice of provolone cheese around mozzarella stick, then cut it in half. Put in center of chicken breast and roll chicken around cheese.

Dip chicken into milk, then bread crumbs. Pat it to get loose crumbs off. Dip into egg "wash" (egg and a little water), re-coat with bread crumbs. Brown in fry pay with non-stick spray, then add a little butter and simmer for 30 minutes. Remove cover near the end.
