BEST OF THE BLACKEYES 
1 (16 oz.) pkg. dried blackeye peas
3/4 lb. smoked pork
1/2 med. onion
1 1/2 tsp. salt
2 qts. water

Put peas in cold water. Soak overnight. Be sure water is well above the peas. Next day place all ingredients in a 6 quart pot. Simmer-boil until peas are soft and tasty. Yields: approximately 2 1/2 quarts.
