PECAN LOGS 
1/2 c. (1 stick) butter

Microwave in a large mixing bowl on HIGH for 1 minute or until melted. Mix into butter:

1 lb. light brown sugar
2 eggs, well beaten
3 to 4 tsp. vanilla

Stir well. Blend in:

2 c. pecans, chopped
1 1/2 c. pancake or biscuit mix

Pour batter into greased 12 x 8 x 2 inch dish. Microwave at HIGH 8 to 10 minutes, rotating dish 1/2 turn every 3 minutes. Center will not be quite set but will firm upon cooling. When cool, cut into long thin bars and sprinkle tops or roll bars in confectioners' sugar.

Since microwave ovens vary in power, you may need to adjust your cooking time.
