1/2 c. (1 stick) butter Microwave in a large mixing bowl on HIGH for 1 minute or until melted. Mix into butter: 1 lb. light brown sugar 2 eggs, well beaten 3 to 4 tsp. vanilla Stir well. Blend in: 2 c. pecans, chopped 1 1/2 c. pancake or biscuit mix Pour batter into greased 12 x 8 x 2 inch dish. Microwave at HIGH 8 to 10 minutes, rotating dish 1/2 turn every 3 minutes. Center will not be quite set but will firm upon cooling. When cool, cut into long thin bars and sprinkle tops or roll bars in confectioners' sugar. |
