PERSIMMON PUDDING 
2 c. persimmon pulp
1 1/2 c. sugar
1 1/2 c. flour
1 1/2 c. milk
1 tsp. baking soda
1 tsp. baking powder
Dash of salt
2 eggs
1/4 stick butter, melted

Mix all ingredients together well and pour into buttered 9x13 pan. Bake for 45 minutes in 325 degree oven. It will come out the consistency of moist brownies. You can dribble a runny glaze of powdered sugar and milk over it or cut and serve with whipped cream.

Remember: Persimmons are at their best when on the soft side with some darkening of skin.
