CHICKEN OKRA GUMBO 
1 lg. hen, cut into serving pieces
1 pt. roux
2 lg. onions, chopped
1 c. green onion tops, minced
1/2 c. parsley, minced
4-5 qts. water
3 c. cooked okra
Salt, black pepper, red pepper

Put water into a deep gumbo pot and bring to a boil. Add roux and cook over medium heat until completely dissolved, stirring often to keep roux from sticking. Boil for 1 hour. Add hen, onions and okra and season to taste with salt, black and red pepper. Cook another hour or until drumstick passes the tenderness test. Add onion tops and parsley and cover pot until ready to serve. When ready to serve, heat until piping hot and serve over hot rice cooked in separate pot.
