BLACK BEANS ON RICE 
1 lb. black beans
1 lg. onion, chopped
2 green peppers, chopped
1/2 clove garlic, minced
1 green onion, chopped
1 bay leaf
1 tsp. salt
1 lb. brown rice, cooked
1 c. black olives, chopped

Cover beans with 6 cups boiling water. Add onions, green pepper, garlic and bay leaf. Cook until beans are tender and liquid is thick. Remove bay leaf, and add salt. Serve over brown rice and sprinkle green onions on top of beans.
