YOGURT MUFFINS 
2 c. Oat Bran
2 tsp. baking powder
2 egg whites, slightly beaten
1/4 c. honey
1 tsp. grated lemon peel
1/4 c. brown sugar
8 oz. yogurt, plain
1/4 c. milk
2 tbsp. oil
1/2 c. fruit

Combine dry ingredients. Combine yogurt, egg whites, milk, honey, oil and lemon peel. Stir into dry ingredients; only until moistened; add fruit. Place in muffin tins and bake in 425 degree oven 18-20 minutes. Makes 12-14 muffins.
