TANGY APRICOT CHICKEN 
5 boneless, skinless chicken breasts
1 env. dry onion soup mix
1 (12 oz.) jar apricot preserves
1 (8 oz.) bottle Thousand island dressing
Wild or reg. rice, enough to serve 4 to 5 people

Preheat oven to 350 degrees. Place chicken pieces in bottom of 9 x 13 inch pan. Combine soup mix, preserves and dressing in a bowl. Mix well. Pour over chicken and cover pan with aluminum foil. Bake 1 hour.

Prepare rice according to package directions. Place rice in center of a large platter. Place chicken pieces around edge of rice. Pour sauce into a gravy boat or serving bowl to be poured over chicken and rice as desired. Sounds awful - tastes great!
