SFINGI 
1 stick butter
1 c. boiling water

Stir to melt butter.

Add: 1 c. flour 1/4 tsp. salt

Add all at once. Cook. Stir vigorously until mixture is smooth and forms a soft ball that does not separate. Cool slightly.

Add 4 eggs, one at a time, beating vigorously after each egg with wooden spoon until thoroughly mixed. Beat until mixture is smooth.

Then drop into hot oil (deep fry) by teaspoon or tablespoon until golden brown. Sprinkle with powdered sugar or honey. (For St. Joseph's Day)
