BEST APPLE CAKE 
1/4 c. butter
1 c. sugar
1 egg, beaten
2 c. chopped apple
1 c. chopped nuts
1 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. ground ginger
1/2 tsp. salt

Sift together flour, soda, salt and spices and set aside. Cream shortening. Gradually add sugar and continue creaming until fluffy. Add, beating well, 1 egg. Add dry ingredients slowly to creamed mixture and beat only until blended. Fold in apples and nuts.

Pour into greased 8 x 8 x 2 inch pan. Bake at 350 degrees for 35 to 45 minutes. Good served warm with lemon sauce.
