BELGIAN WAFFLE 
4 eggs, separated
1/2 tsp. vanilla
3 tbsp. butter
1 c. flour
1/2 tsp. salt
1 c. milk
2 tbsp. cooking oil

Beat egg whites until stiff. Beat egg yolks. Add milk, vanilla, butter and cooking oil to egg yolks and beat well. Add flour and salt to egg yolk mixture. Fold beaten egg whites into batter. Place waxed paper between hot grids for a second to help to prevent sticking.

Very good! I just noticed that I didn't put in the 2 tbsp. of oil and they were good without it. They would have been crisper with the oil but I actually liked them this way. They were light and fluffy and a little crispy. One change I make to all my waffles-since I don't usually use syrup I add a little sugar to the recipe. I added about 1-2 tsp. to this one. Had them with powdered sugar, fresh home-grown strawberries and a little whipped cream. So good! And my 4 y/o nephew loves to help make them. He likes whipping the egg whites. He ate 3/4 of his waffle. I got 5 full round waffles from this recipe. I save the leftovers and they get reheated for a quick snack of breakfast. Never have had frozen waffles-never plan to. Enjoy!
