HAM AND RICE CROQUETTES 
4 tbsp. butter
2 tbsp. minced onion
5 tbsp. flour
1 c. milk
1 1/2 c. ham, diced
1/8 tsp. pepper
1/8 tsp. paprika
1 tsp. dry mustard
1 tsp. Worcestershire sauce
2 c. cold, cooked rice
Very fine dry bread crumbs
1 beaten egg, mixed with water or milk to make "wash"
2 tbsp. butter

Melt butter and saute onions. Add flour; blend. Add milk and cook until smooth and thickened, stirring constantly. Add ham, seasonings and cold rice, chill. Shape into 12 croquettes, roll in crumbs, then egg wash, then crumbs again. Place in buttered baking dish, dot with butter and bake at 350 degrees for 30 to 40 minutes. Serve with horseradish sauce (recipe below).

HORSERADISH SAUCE: Make a cream sauce using 1 tablespoon each of butter and flour, cooked together 3 minutes, then add 1 cup cold milk and cook over low heat, stirring, until thickened. Add 1/2 cup drained horseradish, salt and pepper.
