DIABETIC COOKIES 
1 c. raisins
1/3 c. dates
1/2 c. chopped apples
3/4 c. chopped nuts
1 c. water
1/2 c. vegetable shortening
2 well beaten eggs
2 1/2 tsp. liquid sweetener
1 c. flour
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder

Soak raisins and dates for 1 hour or longer. Boil raisins, dates and apples for 3 minutes, add shortening to melt, cool and add remaining ingredients with nuts last. Refrigerate until well chilled. Drop by teaspoons onto cookie sheet. Bake at 350 degrees for 10 to 12 minutes.
