BISCOTTI CRITTERS 
2 eggs
1 egg yolk
3/4 c. plus 1 tbsp. sugar
1/2 c. butter, melted
1 tsp. each vanilla and grated orange peel
3 c. all purpose flour
2 tsp. baking powder
1 egg whites, lightly beaten

In a large bowl of an electric mixer, beat eggs, egg yolk and 3/4 cup of the sugar until thick and lemon-colored. Beat in butter, vanilla and orange peel. In another bowl, mix flour and baking powder; add to butter mixture and blend well.

Scrape dough onto a greased 14 x 17 inch baking sheet; press out to a thickness of 1/2 inch and shape as desired. Pinch surface with fingers to give texture; slash or score dough for definition.

If desired, accent noses or eyes with cloves. Brush dough with egg white and sprinkle with remaining 1 tablespoon sugar. Bake in a 350 degree oven until golden (20 to 25 minutes). Let cool. Makes 1 large loaf.
