BACON QUICHE 
1 (9 inch) unbaked pastry shell
2 c. grated sharp cheddar
1/3 c. chopped onion
3 eggs
3/4 tsp. salt
1/8 tsp. cayenne pepper
8-10 bacon slices, fried
2 c. grated Swiss
1 c. light cream, heavy whipping cream
1/4 tsp. sugar
1/4 tsp. garlic

Cook bacon; cool. Crumble into bottom of well-buttered pie shell (the butter keeps the crust from getting moist). Sprinkle the 2 cheese (combined) and onion over bacon; set aside.

Pour cream into pan; heat until hot, steaming. In small bowl, beat eggs and seasonings. Slowly blend heated cream into bowl. Pour over bacon, cheese, and onion in pie shell. Bake for 35 minutes at 350 degrees. Serve hot.
