RHUBARB STREUSEL CAKE | |
1/2 c. butter 1 1/2 c. sugar 2 eggs, beaten 3 c. flour 4 tsp. baking powder 1 c. milk 1 tsp. vanilla 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. cinnamon 5 c. rhubarb 1/2 c. sugar 1 pkg. strawberry jello 1/2 c. flour 1/2 c. sugar 1/2 c. brown sugar 1/4 c. chopped nuts 3 tbsp. butter Mix butter, 1 1/2 cup sugar, eggs, 3 cups flour, baking powder, milk, vanilla, salt and 1 teaspoon cinnamon. Mixture will be thick and stiff. Spread half the batter into a well buttered 9 X 13 pan. Mix the rhubarb, 1/2 cup sugar and jello. Spread over batter in pan. Combine 1/4 cup each of the flour, sugar, brown sugar, nuts and 1 teaspoon cinnamon. Sprinkle over rhubarb. Put rest of batter over the rhubarb, cinnamon and sugar mixture. Smooth out carefully. Combine the rest of the flour, sugar, brown sugar, and butter. Cut butter into dry mixture. Sprinkle on top. Bake at 350°F for 1 hour until done. |
