BROCCOLI, TEXAS STYLE | |
1 1/2 lb. fresh broccoli 1/4 c. olive oil 1 clove garlic 1/3 c. minced onion 1 tsp. salt 2 tbsp. water 1-2 hot dry peppers (optional) Chop broccoli very coarsely, using stalks and flowerets. In large skillet, heat olive oil and add garlic, onion, peppers. Simmer until onion is tender. Remove garlic and peppers; discard. Add broccoli, water, salt. Cover and cook 12 to 15 minutes or until tender-crisp. Serve immediately. 4 servings. |
