NECTARINE PIE 
1 (9 inch) unbaked pie shell
4 med. nectarines
2/3 c. sugar
4 tbsp. flour
1/2 tsp. cinnamon
1/4 tsp. almond extract
1 c. heavy cream
1/4 tsp. salt

Combine sugar, flour, salt, cinnamon, cream and almond extract. Set aside. Preheat oven to 400 degrees. Place nectarines in boiling water for 30-45 seconds, then plunge into cold water and remove skin. Cut in half, remove pits. Place halves flat side down in pie shell. Pour cream mixture around them and bake 35-40 minutes. Serve with ice cream.
