ADIRONDACK PORK CHOPS | |
4 loin pork chops, about 1 inch thick Salt and pepper 2 med. yellow onions, peeled 1 green pepper, cored, seeded, and quartered 2 carrots, scraped and halved 2 med. potatoes, quartered 1 tbsp. lovage or celery leaves 1 clove garlic, finely chopped 1 c. tomato sauce 1/2 c. white wine 1. Sprinkle both sides of chops with salt and pepper. 2. Put chops on grill, 5 minutes the side. 3. Fold in half a strip of aluminum foil about 5-6 feet long. Place chops in a single layer on the folded sheet. Scatter over the chops the onions, green pepper, carrots, potatoes, lovage, and garlic. Pour the tomato sauce and wine on top. 4. Fold the lower half of the aluminum to an inch of the top and make a firm seal. Fold the side edges to seal. Fold the top edge down about an inch to make a re-seal. Repeat with sides. Keep folding top and side edges until the contents are snug in the pouch. 5. Place pouch on grill just to the edge of the intense heat. After 5 or 10 minutes you will hear the contents simmering. This should be gentle. If there is rapid boiling, move the pouch further way from the center of the fire. 6. Rotate the pouch a quarter-turn every 15 minutes to assure the contents cook evenly. 7. After 1 hour of simmering, remove the pouch from the grill. Remove chops and vegetables and ladle sauce over all. Serves 2-3. |
