ZUCCHINI FRITTERS | |
2 med. zucchini, unpeeled & shredded 1 c. flour 2 beaten eggs Salt to taste Pepper to taste 1 tsp. oregano 1 clove minced garlic 1/4 c. water 1/4 c. Parmesan cheese Combine and mix all ingredients. Mixture will be the consistency of pancake batter. Drop by tablespoonfuls into hot oil and fry until golden brown. Drain on paper towels. |
