APRICOT PIE 
2 lg. cans apricot halves, drained
1 1/4 boxes light brown sugar
1 box Ritz crackers (3 stacks)
1 1/2 sticks butter

In buttered baking dish, arrange well drained apricot halves, add a layer of brown sugar; top this with 1/2 of the Ritz crackers and dot with butter. Repeat layering to top of dish. Bake at 300 degrees for 1 hour or until thick and crumbly on top.
