CHOCOLATE MERINGUE PIE | |
9 inch baked pie shell 1 1/4 c. sugar 3 1/2 tbsp. cornstarch 1/4 tsp. salt 6 tbsp. cocoa 2 c. milk 3 egg yolks 2 tbsp. butter 1 tbsp. vanilla MERINGUE: 3 egg whites 1/4 tsp. cream of tartar 6 tbsp. sugar 1/2 tsp. vanilla Stir together sugar, cornstarch, salt and cocoa in saucepan. In separate bowl, blend milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir 2 minutes. Remove from heat, blend in butter and vanilla. Pour into baked pie shell. Add meringue, sealing to edge of crust. Bake about 10 minutes at 400 degrees, until lightly brown. Cool and refrigerate. MERINGUE INSTRUCTIONS: Beat egg whites and cream of tartar until foamy. Beat in sugar gradually, lightly beating whites until stiff. Beat in vanilla. |
