POP'S APPLE UGLY CAKE 
1 c. sugar
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2/3 c. salad oil
1 egg
1 tsp. vanilla
2 c. peeled chopped apples
1/4 c. raisins
1/4 c. chopped nuts - pecans (optional)

Mix first 5 dry ingredients, then add the cooking oil, egg, apples, raisins, and nuts and vanilla. Bake in 325 degree oven for 40 to 45 minutes. Spray pan slightly with non-stick cooking spray, but no need to flour pan.

Keeps in refrigerator (freezer section) for a long time. (I make it with whole wheat graham flour.)
