RICE PUDDING 
1/2 c. raw rice
2 c. water
4 c. whole milk
4 egg yolks
1 c. sugar
Cinnamon

Simmer rice in water and milk for about 45 minutes or until mixture becomes thick and rice is soft. Beat egg yolks well with sugar. Gradually stir rice mixture into beaten eggs and sugar. Mix well. Return to heat and cook over low heat, about 2 minutes, stirring constantly so that it won't curdle. Pour into individual pudding dishes and sprinkle with cinnamon. Makes 8 to 10 servings.
