BAVARIAN-STYLE PORK CHOPS 
1/2 c. unsweetened apple juice
1/2 c. water
1/4 c. cider vinegar
2 tbsp. sugar
2 tbsp. cornstarch
1/8 tsp. pepper
6 (1/2 inch thick) center-cut pork chops (about 2 lbs.)
Vegetable cooking spray
2 med. cooking apples, peeled, cored, and thinly sliced
1/3 c. chopped onion
1 med. size red cabbage, shredded

Combine first 6 ingredients; mix well, and set aside. Trim excess fat from pork chops. Brown pork chops in a large skillet coated with cooking spray; remove from skillet; and set aside.

Cook apples and onion in skillet, stirring constantly, 2 minutes. Add cabbage; reduce heat to low, and pour reserved apple juice mixture over cabbage. Arrange pork chops over cabbage. Cover and simmer 20 minutes or until cabbage is tender.

Yield: 6 servings (about 310 calories per pork chop and 1 cup cabbage-apple mixture). Protein 26.5; fat 11.7; carbohydrate 25.6; cholesterol 77; iron 1.9; sodium 76; calcium 88.
