TURKEY WALDORF SALAD 
8 oz. shell pasta
1 tbsp. vegetable oil
1/3 c. plain yogurt
3 tbsp. cider vinegar
2 tbsp. mayonnaise
4 tsp. honey
1/2 tsp. curry powder
1/2 tsp. salt (optional)
2 c. (12 oz.) diced, cooked turkey
1 1/2 c. diced celery
3/4 c. diced mushrooms
1 1/2 c. sliced zucchini
2 lg. red Delicious apples, unpeeled, quartered, cored and diced
4 scallions, sliced
2/3 c. chopped walnuts

Cook pasta as directed on package, adding oil to the cooking water. Drain and rinse in cold water. Whisk the next 5 ingredients in a large bowl until blended. Add pasta, turkey, celery, apples and scallions. Toss to mix. Refrigerate 30 minutes before serving. Sprinkle with walnuts just before serving.
