MANDARIN ORANGE SALAD 
Romaine
Drained mandarin oranges
Caramelized almonds, sliced
Green onions

Heat sugar in frying pan and add almonds when sugar liquefies and coats almonds, stirring constantly. Cool on marble or wax paper.

DRESSING:

1/4 c. oil
2 tbsp. sugar
2 tbsp. vinegar (white or red wine vinegar)
Dash of tarragon to taste
Few dashes of Tabasco
Salt and pepper

Shake well and chill.
