PEACHES AND CREME CHEESECAKE | |
3/4 c. flour 1 tsp. baking powder 1/2 tsp. salt 1 pkg. vanilla pudding (NOT instant) 3 tbsp. butter 1 egg 1/2 c. milk 15-20 oz. can peach slices 8 oz. cream cheese, softened 1/2 c. sugar 3 tbsp. peach juice 1 tbsp. sugar 1/2 tbsp. cinnamon Mix together the flour, baking powder, salt, dry pudding mix, butter, egg and milk. Mix for 2 minutes on medium speed. Pour into greased pie pan. Drain peaches, save juice, Put peaches over batter. Mix together on medium speed the cream cheese, 1/2 cup sugar and 3 tablespoons peach juice. Spoon on top of peaches to 1 inch edge of pan. Sprinkle 1 tablespoon sugar and 1/2 tablespoon cinnamon over top. Bake at 350 degrees for 30-35 minutes. Filling will look soft; store in refrigerator. |
