“LAZY DAISY COFFEE CAKE” IS IN:

LAZY DAISY COFFEE CAKE 
Combine:

1 1/2 cups all purpose flour
1 cup light brown sugar
1/2 tsp. salt
1 tsp. cinnamon

Using two knives or a pastry blender, cut in:

1/4 cup cold butter

Until mixture resembles coarse crumbs. Measure out 1/4 cup of this mixture and set it aside for the topping.

To the remaining mixture, add:

1 tsp. baking powder
1 egg
3/8 cup milk

Mix. Transfer to a greased and lightly floured 8 or 9-inch round or square cake pan. Sprinkle with reserved topping.

Bake in a preheated 375°F oven for 25-30 minutes or til done.

Variation: Add chopped nuts or slivered almonds to topping.

Optional: Drizzle with confectioners sugar icing. To make confectioners sugar icing, combine 1/3 cup confectioners sugar with a few drops of vanilla or almond extract and enough water (just a few drops) to make icing a spreading consistency. If frosting is too thick, add more drops of water, if frosting is too thin, stir in a tablespoon of sugar at a time til mixture may be poured.
