CHOCOLATE MACAROONS | |
2 egg whites 1/4 tsp. salt (or to taste) 1 c. sugar 1/2 tsp. vanilla 1 1/2 sq. of bitter chocolate, melted 1 1/2 c. shredded coconut Beat egg whites and sugar until foamy, set aside. Add 2 tablespoons of chocolate mixture at a time, into a bowl, beating after each addition. Continue beating until mixture will stand in peaks, then add and fold into the egg white mixture. Drop from a teaspoon onto an ungreased cookie sheet. Bake at 325 degrees for about 20 to 25 minutes. Cool before removing. Makes 2 dozen. Macaroons are about 1 1/2 inch in size. This is great for the holidays and very quick. |
