MARINATED VEGETABLES 
1/2 c. wine or cider vinegar
1/3 c. vegetable or olive oil
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. dried basil leaves
1/4 tsp. dry mustard
1/4 tsp. garlic powder
1/4 tsp. pepper
1 cut into wedges tomato
1 c. flowerettes broccoli
1 c. flowerettes cauliflower
1 c. sliced carrots
2 tbsp. water
8 oz. whole mushrooms

In a 1 cup measuring bowl blend first 8 ingredients and set aside. Combine broccoli, cauliflower, carrots and water in a 2 quart casserole; cover. Microwave on full power (high 3 to 4 minutes) or until colors become vibrant, stirring after half the time. Drain, add mushrooms and tomatoes. Stir marinade, pour over vegetables. Cover and refrigerate 3 to 4 hours before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
