CHICKEN, PEAS AND PASTA 
1/2 lb. pasta, any kind or angel hair
1 lg. breast of chicken (1 1/2 lb.)
2 tbsp. olive oil
1 tbsp. butter
2 cloves garlic
1 sm. onion (optional)
1 sm. can peas
1/2 c. chicken broth or warm water
1/2 c. Parmesan cheese

Cube chicken into 1/2 inch squares. In warm pan, heat oil and butter. Saute onion and garlic until golden. Remove garlic. Add chicken, cook until no longer pink, approximately 5 minutes. Add peas with the liquid. Add warm chicken broth or water; keep warm. Cook pasta according to directions. Strain.

Place pasta on a large platter, add 2 large spoons of cheese. Stir. Pour chicken and peas over pasta and add more cheese. Cooking time, 25 minutes. Serves 3-4 portions.
