CASHEW BRITTLE | |
2 c. granulated sugar 1 c. white Karo syrup 1/2 c. water 1 c. butter 3 c. cashews, salted 1 tsp. baking soda Mix sugar, syrup and water; stir until sugar dissolves. Let boil and blend in the butter. Cook to 230 degrees and stir until it reaches 280 degrees. Add the cashews and stir until it reaches 300 degrees. Remove from the heat and quickly stir in soda. Mix well. Pour into 2 well buttered cookie sheets. As it cools lift edges with fork and stretch. Remove from pan as soon as possible and break into pieces. |
