EGGLESS NO CHOLESTEROL CORN
MUFFINS
 
1 c. cornmeal
1/2 c. flour
1/4 c. sugar
1 tsp. salt
2 tsp. baking powder
1 c. skim milk
2 tbsp. oil

Sift and mix together the dry ingredients. Add the milk and shortening. Pour into paper lined muffin cups (2/3 full) and bake in a 350 degree oven for 30 minutes.
